The Lunigiana Preziosa brand markets and distributes products to preserve the ancient cuisine of Pontremoli in an artisanal way, the essence of which are testaroli, a soft cylinder of pasta, made from water, flour and salt. The cooking takes place in the "testi", large circular pans which were originally made of clay and composed of two parts, a round-shaped underlying part (sottano), and a slightly conical lid (soprano), which favored cooking on burning embers of a fire. Tips for cooking: Bring water to the boil, add salt to taste. Cut the testarolo into small pieces. When the water boils, turn off the heat and put the testarolo in the pot. Remove it with a slotted spoon after a maximum of 2/3 minutes. Season to taste.
