"Essentiae Lunae" Sambyké differs from the other hippocras wines because of the presence of elderflower, which makes this recipe original and unique and which provides a distinct sensory element. In fact, the term “sambuco” (Italian for Elderflower) derives from the Greek "sambyké", which was a stringed instrument, triangular in shape, built with the hollow branches of the shrub. The elderberry plant, believed to be magical throughout the ancient world, was often used to flavor beverages and has many therapeutic properties. Inviting as an aperitif, it can accompany cheeses, dried fruit and desserts, and is excellent as a digestive and for meditation.

The "Essentiae Lunae" hippocras is an alcoholic beverage obtained from the infusion of various spices and a full-bodied red wine. The etymology suggests its legendary creation by the hand of the great physician Hippocrates, who let the dittany and artemisia flowers macerate in Greek wine, strong and rich in sugars. In the Middle Ages it was enriched with new aromas and flavors, thanks to the trade in oriental spices inspired by the Venetians. This hippocras has a very marked and distinctive flavor that can accompany foods with a strong or spicy flavor, cheeses, sweets and chocolate. Digestive and excellent for meditation, it is composed only of red wine, wildflower honey, cane sugar and spices.

Mead is the oldest fermented product in the world and can be considered a "honey wine". The name Idormele derives from the Greek words "Hýdor" (water) and "Méli" (honey), and herein lies the essence of this product, a blend of water and honey, to obtain alcoholic fermentation. In ancient times it was a symbol of immortality; in the Middle Ages it was customary to give newlywed couples a quantity of mead sufficient for one moon (one month), to encourage fertility and procreation, especially for the birth of a male heir. The honey is dissolved in water in specified proportions and the must obtained is placed to ferment in stainless steel drums until it reaches the desired alcohol content. The "Essentiae Lunae" mead is characterized by an extraordinary delicacy and a refined sweetness, it accompanies cheeses, dried fruit, sweets and dark chocolate and is excellent for meditation.
