They are white pigs, whose weight exceeds 250 kg, coming from the Po Valley and black pigs of Cinta Senese, reared in the wild in the farm "O.T." by Oliviero Toscani in Casale Marittimo in Tuscany. With these meats, the brand makes Lardo di Colonnata, Vergazzata, Guanciale, Pancetta steccata and this Crema di lardo, perfect for croutons or to create more flavoursome meat dishes.
