"Cuvée Lunae" Spumante Brut Metodo Classico Millesimato 2019

For us Cuvée Lunae is the realization of a dream that has followed us for more than a generation: making a classic method sparkling wine in our land, using our traditional vines. It is wine that conveys a further expression of our winemaking tradition, another image of its territory of origin. The base wines of the Cuvée Lunae derive from a single vintage and are the result of a careful selection of the grapes harvested by hand in the vineyards with the greatest vocation, located between the hills of Castelnuovo Magra and the Ligurian Sea. After soft pressing in the absence of oxygen, the must obtained ferments in steel tanks at a controlled temperature. The wines are aged on the fine lees for about 8 months. The Albarola contributes by bringing acidity and sapidity, while the Vermentino characterizes the blend with its own aromatic contribution and territorial imprint. Finally, the bottles remain at rest for about 26 months before disgorgement.

Vinification: After pressing, the must ferments in steel tanks at a controlled temperature. Afterwards the wines are aged for 8 months on the fine lees, after the tirage the bottles remain at rest for about 26 months before disgorgement.
